A summer appetizer with quail eggs and red caviar is a simple vegetable salad with a spicy sweet and sour dressing, which successfully combines with eggs and caviar. There is an explosion of vitamins in the salad - fresh cucumber and radish, sweet pepper and ripe tomato, as well as creamy curd cheese, which perfectly complements the vegetable mix. This dish can be served before lunch as a light meal with toasted white or rye toast.

For refueling, any tasty unrefined oil and fragrant balsamic vinegar are suitable.

Ingredients for appetizer with quail eggs and red caviar.
- 4-6 quail eggs;
- 30 g of red caviar;
- 1 fresh cucumber;
- 1 tomato;
- 3-4 red radishes;
- 1 2 pods of sweet pepper;
- 50 g cream cheese curd;
- a bunch of dill;
- salad leaves and olives for serving.
For refueling:
- 1 teaspoon of honey;
- 1 teaspoon of hot soy sauce;
- 2 teaspoons of balsamic vinegar;
- 2 tablespoons of olive oil;
- sea salt, black pepper.
A method of preparing a summer snack with quail eggs and red caviar
Prepare the dressing - intensively mix honey, soy sauce, balsamic vinegar, delicious extra Virgin Extra Virgin Olive Oil, a pinch of sea salt and a pinch of freshly ground black pepper in a bowl.

We put quail eggs in cold water, bring to a boil quickly, cook for 4 minutes, transfer to a pan with cold water.
We clear the cooled eggs from the shell, cut in half, get the yolks.

With a fresh cucumber, we peel off the skin, cut into thin strips. Just grate the cucumber on a Korean grater or with the help of a vegetable cutter - you get long narrow chips.
Also grind radishes. It will turn out shavings of two colors pink from radish and green from cucumber.
If you cut the radish with a knife with a scraper, then the middle remains. The remaining radish is cut into small cubes.
Cut the tomato in half, remove the seeds, cut out the seal near the stalk. Cut the flesh into small cubes.
I advise you to always remove the middle from the tomato, if the tomato is intended for salad. This part of the vegetable contains a lot of moisture. Throwing away is not necessary, add to soup or sauce.

Half the pod of bell pepper, peeled from seeds, cut into small cubes.
Cream cheese is also finely chopped. Add the chopped cheese to the rest of the ingredients.
Finely chop a bunch of fresh dill, put in a salad bowl.
Add dressing to the salad, mix and you can serve a snack.

Put a few fresh salad leaves on a plate, put the salad on the leaves.

Knead the yolks of quail eggs with a fork, put in the center.
