Bean stew with mushrooms is a hearty vegetarian dish rich in vegetable protein. If there is no time to prepare dried bean dishes, then there is a good alternative - canned beans. The cooking time for canned vegetables will be reduced to half an hour.
Vegetable stew with mushrooms, prepared according to this recipe, is so satisfying that by lunch you can not cook the first dish, just a plate with stewed beans.

- 200 g of dried beans;
- 300 g of champignons;
- 120 g of onion;
- 150 g carrots;
- 60 g of ketchup;
- 15 g of soy sauce;
- 5 g of sweet paprika powder;

A method of preparing stewed beans with mushrooms
To reduce cooking time, dry beans soaked in cold water in advance for several hours. We change water several times. Pre-soaking the legumes helps get rid of such troubles as flatulence.
Then pour the beans into a deep pan, pour 2.5 liters of cold water, put on the stove. Cook for 50 minutes after boiling, at the very end of cooking, salt to taste. Discard the finished beans on a sieve.
By the way, you can cook a delicious vegetarian soup on bean broth. But now we are interested in the recipe for stewed beans with mushrooms.
While the beans are boiling, prepare the remaining vegetables and mushrooms. Chop finely onion. We leave one small onion for frying mushrooms.
Cut the carrots into strips or rub on a large vegetable grater.
We thoroughly wash fresh champignons under the tap with cold water, put them on a paper towel so that the mushrooms dry.
If the mushrooms are without visible impurities, then you can simply wipe them with a damp cloth.
In a pan, heat two tablespoons of vegetable oil. First, put the onion, chopped into rings, into the heated oil, fry for several minutes. Then we throw the whole champignons into the pan. Cook over high heat for 5-6 minutes, at the end pour the soy sauce and sprinkle with sweet paprika.
Heat in a deep thick-walled pan or in a roasting pan 30 g of vegetable oil. Pour the chopped onions and carrots into the roasting pan, fry for 10 minutes, until the vegetables are soft.
To the fried vegetables add boiled beans, mix.
Next, add ketchup. Instead of ready-made ketchup, you can chop several ripe tomatoes in a blender or take homemade tomato sauce.
Then we put mushrooms fried with onions in a roasting pan, salt and pepper together to taste, close the roasting pan with a lid, turn off the gas to the minimum and simmer the stew until cooked for about 20 minutes. During this time, all tastes will combine, the ingredients are soaked in tomato and juices of each other.
To the table we serve stewed beans with hot mushrooms, decorate with parsley or any other greens. Enjoy your meal!
